Introducing Seven Three Distilling’s latest release: Whiskey Tree Bourbon, a spirit deeply connected to the rich history and natural beauty of the Honey Island Swamp. This bourbon pays homage to a time when, at the height of Prohibition, the southern Louisiana swamp was home to a secret meeting place known as the Whiskey Tree. Far from the reach of officials, moonshiners would gather under this iconic bald cypress late into the night, united by a shared determination to stay one step ahead of the law and preserve the vibrant spirit of New Orleans. Even today, whispers of their clandestine gatherings seem to echo in the stillness of the swamp, carried by the wakes of departing boats.

Whiskey Tree Wheated Bourbon embodies the spirit of its namesake, blending adventure, tradition, and New Orleans craftsmanship into every sip. Its nose greets you with fruity and floral notes of white grapes, pear tart, jasmine, and oak, while the palate unfolds layers of butternut squash, brown butter, baking spices, and Tarte Tatin. Tasting Notes By nancy fraley

The nose is very fruity, with white grapes, pear tart, apple cobbler, and sweet peach tea, and white blossoms like citrus and jasmine, with gentle tannins and oak. In fact, this drinks a lot like an XO Cognac, with great elegance and finesse, thanks to the high NOLA humidity. The palate offers all the above notes that the nose promises, plus some butternut squash and walnut ravioli sautéed in brown butter with light baking spices, crème brûlée, and Tarte Tatin. The alcohol is generally soft and round on the palate (again, thanks to the high humidity!), with a warm, long finish that gently tapers off. I think it’s a perfect “marriage” between the 300 year history of Bourbon in New Orleans and the even older French Cognac tradition, which also has a rich history there. It’s definitely the delicious offspring of both traditions.
