Lawyer by day and fledgling moonshiner by night, Sal launched Seven Three with Jeff Rogers and their wives, Eileen Bivalacqua and Mary Anna Rogers, in pursuit of a singular vision — to make distinctive distilled spirits that celebrate New Orleans while teaching others about this beautiful city’s past and present. On any given day, that can find him sweeping and mopping, working with distiller Erik Morningstar to plan the growing spirits lineup, hitting the road to visit retail, bar and restaurant partners, or developing a distillery experience that will delight locals and visitors alike.
Sal was born at Baptist Hospital in New Orleans and earned his law degree from Tulane University. When Jeff, his lifelong friend, offered the opportunity to start a New Orleans distillery, Sal jumped at the chance. He appreciates the comradery among competitors in the spirits industry, a reflection of his favorite thing about New Orleans: the people and their unmistakable joie de vivre. When not under direct orders from wife Eileen, his boss at Seven Three, Sal is probably pestering local bartenders about any bottles he doesn’t recognize, or asking them to craft him an Old Fashioned or Gentilly Gin with a dash of citrus bitters, an olive and a twist.
Eileen leapt headlong into launching Seven Three with her husband, Sal, and their friends Jeff and Mary Anna Rogers in 2015. As the distillery’s official “Boss Lady,” she applies her formidable skill at managing people, organizing operations and getting things done. She’s also Seven Three’s “boots on the ground,” main point of contact and brand ambassador in New Orleans and beyond — duties that have allowed her to meet interesting and unique people across the spirits industry, as well as dive even deeper into the amazing New Orleans community.
The child of parents who immigrated from the Azores Islands, Eileen piloted an ancient Honda from New Hampshire to New Orleans in 1999 and never looked back. After earning an MFA degree in arts administration from UNO, she worked from 2004-2011 as an artists’ rep and gallery manager, then switched gears and took a job at then-boyfriend, now-husband Sal’s law firm, where she still puts in a little time these days. The local live music scene is a strong #1 on Eileen’s “What I Love About New Orleans” list, and when it’s time to wet her whistle, she, like Sal, reaches for a refreshing Gentilly Gin on the rocks with a dash of citrus bitters, an olive and a twist.
The creative force behind Seven Three Distilling, Erik sources locally farmed grains, fruits and botanicals, creates new recipes and mash bills, and oversees all aspects of production. He joined our team after a successful tenure at Two James Spirits in Detroit, where he produced a full line of award-winning whiskeys, gins, absinthe and vodka. Erik trained under Dave Pickerel, former master distiller at Maker’s Mark, and has a penchant for marrying time-honored distilling techniques and ingredients with esoteric and experimental processes. He aims to create nuanced spirits that are traditional, yet unexpected — much like the city that Seven Three celebrates — and right out of the gate, his St. Roch Vodka earned a bronze medal at the American Distilling Institute’s national spirits competition. True to his art background, Erik relishes working with the subjective, often subtle details that can distinguish an exceptional spirit.
Erik and his wife chose to settle in the Treme neighborhood of New Orleans and quickly fell in love with its close-knit sense of community, palpable history and amazing food. He’s also an avid paddler, and designs and builds his own canoes and kayaks. When he’s not busy perfecting Seven Three’s next offering, you might find him sipping an impeccably crafted Last Word or Boulevardier cocktail.
Jeff started Seven Three along with his wife, Mary Anna, childhood best friend and college roommate Sal Bivalacqua, and Sal’s wife, Eileen. For more than twenty years, his passion for New Orleans, its neighborhoods and its people has inspired and grown several successful hospitality and tourism businesses, including Cajun Encounters, New Orleans Legendary Walking Tours and Audubon Limousine. With Seven Three, Jeff and his team are committed to building a truly unique destination distillery that celebrates New Orleans through its neighborhoods, artisan spirits, music and cocktail culture, while supporting regional Louisiana agriculture. His daily responsibilities include brand management, product quality (also known as “taste testing”) and working with Sal, Eileen, Mary Anna and distiller Erik Morningstar to achieve daily objectives.
A New Orleans native, Jeff moved to nearby Slidell at age six and returned after attending college at Southeastern Louisiana University. He enjoys the city’s rich history, culture and food, and as an avid fisherman, he also believes the area is among the greatest fisheries in the country. Family always come first for Jeff, his wife and their three kids, and the cocktail that comes first for him is a classic Moscow Mule, preferably crafted with Seven Three St. Roch Vodka.
Mary Anna co-founded Seven Three with her husband, Jeff, and their friends Sal and Eileen Bivalacqua. Inspired by a distillery visit during a family vacation, she returned home to New Orleans determined to create local spirits — a natural extension of her deep experience in the hospitality business as co-owner of Pelican New Orleans and its brands, Cajun Encounters, New Orleans Legendary Walking Tours and Audubon Limousine. Today, Mary Anna helps oversee the team and create a world-class distillery and tourism experience for Seven Three visitors.
She’s a near-New Orleans native, having grown up in Ocean Springs, Mississippi, and settled in nearby Slidell, Louisiana, after college. Mary Anna’s grandmother lived near City Park, which meant plenty of visits and Mardi Gras memories. Now officially a local, she enjoys life away from Seven Three and Pelican New Orleans by spending family time with Jeff and their three kids, shopping and traveling — yet no matter how far and wide she journeys, she still hasn’t found food that compares to her fair city’s incredible offerings. And when it’s time to wind down, she’s particularly partial to a fresh St. Roch Vodka and soda. Extra lime, please.
